To change the outgoing servers on your Mac Mail client, follow this tutorial. This will also show you how to edit how many outgoing servers you have available, and the connection type for each account. These outgoing mail settings can be found in 'Preferences' and 'Accounts'. From here there will be a drop down menu where you can select 'Edit SMPT Server List' which will allow you to edit the outgoing server for your email account.
